There’s something that feels indulgent about ordering a cocktail—and no, I’m not talking about the Rum and Cokes that you down on Saturday nights at dive bars to get drunk. Mixing cocktails, as it turns out, is a little bit of an art and science. There’s a certain combination of the right, premium ingredients that brings out the flavors of a spirit, creating one that pleases your taste buds as much as it gives you a good buzz.
Thankfully, Cebu’s cocktail scene has changed. There’s a continuously growing number of restaurants that offer specialty cocktails, bringing their own spins to classic concoctions, or coming up with something entirely new. For one, Jan Rodriguez at The Weekend presents some incredibly delicious takes on the Gin & Tonic that make you feel like you’ve never actually had a real one before.
But sometimes, more than just the taste, cocktails can create a feeling, whether it’s boosting your energy, encouraging conversation, or calming you down. It can even complete an experience—after all, what would an afternoon at the beach be without a refreshing glass of your preferred poison? Aside from the aforementioned mixes at The Weekend, here are my favorite drinks in the city.

Perched on top of Mactan’s blue waters, the Ibiza Beach Club is one of the best spots to enjoy a drink on a sunny afternoon. I particularly enjoy the Caipimara—vodka mixed with passionfruit and lime juice, with some brown sugar. Fruity and sweet, it’s the kind of summer refreshment to enjoy while lounging on one of Ibiza’s net beds.
Of course, Ibiza offers a number of other delicious mixes to enjoy. There’s the Ibiza Sour and Ibiza Mojito, elevated versions of the classics. Something even fruitier is the Sangria, with chunks of fruit that add another level of flavor to the drink.

When Enye opened at Crimson Resort and Spa Mactan, locals were excited to sample Chef Chele Gonzales’ modern Spanish cuisine. A pleasant surprise, though, were the offering of handcrafted cocktails that could be enjoyed on their own for happy hour, or to complement the dishes served.
Enye has a number of signature cocktails, but we have to highlight the Mantegalo Seco. Especially popular during the restaurant’s launch, the cocktail has chardonnay, lime, brown sugar, pineapple and cachaca, a spirit made from sugarcane. It’s a play on sweet and sour flavors that make for a refreshing afternoon drink.

Definitely with its own flair, the Burning Bush gets plus points for presentation. The drink is served with a burning rosemary twig, its smoke enclosed under a rounded glass that is removed upon serving. The rosemary scent is a nice prelude to its flavors—single malt whiskey and Makers Mark bourbon complemented with ginger liquer, fig syrup, Yoichi salinated herb, and lemon.
Aside from the Burning Bush, Morals & Malice offers a number of other delicious cocktails that were created by Manila-based mixologist Kalel Demetrio. It’s the kind of drink that best kicks off a night on the town.

I have to admit, part of this cocktail’s appeal is its cheeky pun of a name. In fact, The Pig & Palm’s cocktail list, which was crafted by The Social Company’s bar executive Jamie Jones, reads like a wordplay exercise: Rum DMC, Coff Medicine, Notorious P.I.G, among others.
The Dill or No Dill is made with gin, lemon juice, elderflower cordial, cucumber dill and smoked salt. It’s one of those selections whose popularity boils down to personal preference; some people I know find the dill too strong for their liking. As for me, I love the sort of herby taste it brings to the cocktail, and it’s a light, refreshing one to enjoy with dinner.

If you haven’t already noticed based on my choices, I have a preference for the sweet and citrusy.
Another drink that brings that together wonderfully is the LG Campbell Punch from Circa 1900. The old-fashioned house is the perfect place to enjoy this summery cocktail, which is made with dark rum, fresh calamansi juice and coconut sugar. Enjoy with one of Circa’s delicious starters: the Ube Ravioli with Shredded Pork Lechon and Apple, or the Crispy Spice and Pepper Squid are great savory choices that counter the sweetness.

]]>The purple yam is definitely a staple at Filipino potlucks. Most of us will instantly recognize the taste of ube, and non-natives will associate the taste as an amalgamation of pistachio, vanilla and coconut. Despite the comparison, ube has a unique flavor that has helped create its own identity in the midst of all the outrageous food trends floating around on the internet.
Dubbed the “new matcha,” ube is gaining stateside attention for its striking color and earthy flavor—you don’t really need a technically refined palate to be able to enjoy it. Now, with the marriage of western influences to its eastern roots, ube is used as a base for artisanal gelato, combined with other ingredients in cakes, as icing on doughnuts, or even in savory pasta dishes.
Ube is fast becoming a versatile ingredient, experimented with in innovative ways that stray far from traditional Filipino cuisine. One simple ingredient, many ways to make use of it. Some of Cebu’s celebrated chefs showcase their take on the humble purple yam and elevate it to its highest potential.

WILLIAM STRINGFELLOW

Chef William gives off a meticulous aura when he prepares what he needs for his ube recipe. He continuously hones his expertise through his experience working in many countries in Asia, the Middle East, Europe, Africa and the USA. He divulges that he continues to learn as he travels, and shares his knowledge with other people. He had previously worked with a Filipina pastry chef named Ceding before, claiming that she makes the best ube pastries he’s ever tasted—his recipe is an adaptation of hers, with a bit of personalization in the final design.

Ube macapuno torte
On the outside, the torte looks extravagant as it’s topped with various kinds of chocolate—swirls, chips, shavings, you name it—their colors contrasting with the vibrant purple of the cake. Chef William works quickly to build the garnish, seeing as the cake doesn’t do well in warm temperatures. On the inside are rich layers of mousse that melt the moment they touch your tongue. What’s more interesting to note is that every time Chef William creates the ube-macapuno torte, it always looks completely different.

MARVIN JIMENEZ CONCHA

Having been a pastry chef for six years now, Chef Marvin is no stranger to the vibrant purple yam. His inclination is to create modern trends of cakes and varieties of flavor combinations, infusing art and creativity in every piece of work. His tenure as a pastry chef shines through as he easily whips up not one, but seven different ube recipes. He definitely doesn’t let his experience go to waste, also imparting his knowledge to others as an instructor at one of the well-known culinary schools in Cebu.

Maja ube
The Mövenpick property in Mactan is well-known for its maja ube, which is popular among locals and tourists alike. The earthy sweetness of the ube is perfect when combined with the rich coconut cream. Toasted coconut tops the ube maja, adding depth to the texture with its crunch.

Halo–halo cake
One of the ways to enjoy ube is by having it in halo-halo. Now imagine the key ingredients in this beloved Filipino treat, but in a cake! The recipe has layers of ube cake, macapuno and leche flan. It’s garnished with a flower made out of white chocolate and makes for an aesthetically-pleasing treat, on top of being a pleasing and familiar combination of flavors.

STEVE SHRIMSKI

Steve Shrimski had become an executive chef at just 23, and has since spent the next 30 years working throughout Australia and beyond. He shares that he likes taking on challenges, and that he always thinks of how to create dishes that are healthy just as they are tasty. In fact, he admits he’s excited to work with ube—ube is an antioxidant that offers immunity-boosting and cancer-fighting properties. After all, Chef Steve believes that a creative chef should be able to produce something no one else has tried or succeeded at.

Ube and malunggay puff pastry vol–au-vent
This recipe calls for fresh ube that’s been poached, dehydrated then ground into a fine powder. Vol-au-vent, or a small hollow case of puff pastry, is taken out of its traditional box and modernized by adding ground ube and malunggay. This creates a major twist, making it healthy. Keeping with the modern Filipino style, it’s filled with adobo-flavored foie gras parfait, which is light and fluffy. It’s garnished with balsamic-caramelized onions to offset the adobo’s acidic flavor.

Ube ravioli with coco–dobo
Another dish of traditional Filipino flavors with European influences, this incorporates ube into the ravioli dough, giving it a vibrant purple color. It’s filled with coco-dobo (coconut-adobo sauce), crispy shredded Circa lechon, and garnished with crispy lechon skin on alugbati and poached ube discs.

L’Artisan
As he’s married to a Filipina, Chef Geoffrey has a fair amount of encounters with Filipino food. Having met her in Dubai, they came to Cebu for a vacation and saw the opportunity to open their own restaurant. He shares that his wife is the one who gave him the idea for his recipe—it’s the first time he’s tried cooking it outside the traditional way, and he’s so pleased with the outcome that he plans on putting it in L’Artisan’s next menu.

Ube and corn cheesecake meringue
With its layers of decadent ube and creamy corn, Chef Geoffrey’s cheesecake shows the immense thought put into it. A coating of crushed macadamia nuts surrounds the cheesecake. and delicate puffs of toasted meringue top it off. It’s garnished with a candied lemon and a single blue pea flower, which is edible and adds a bright pop of color.

Soho Park
Warm and always smiling, Chef Rob excitedly talks about the ube dish he’s prepared for us. The recently opened Soho Park is his first venture into the dining scene in Cebu. Starting out in the industry as a dishwasher when he was 15, he has spent the past 17 years working his way up and eventually calling Cebu his home. He shares that not having ube on their menu wasn’t an option—in fact, the dish he presented is based on one that’s already on their menu, and even pairs it with a matching ube drink.

Ube waffle with confit duck leg and foie gras
It may not be a typical Filipino pairing, but Chef Rob’s recipe is based on the popular chicken and waffle dish in the West. He’s incorporated ube into the waffles, giving it vivid color and a subtle flavor that sets it apart from the typical waffle. Its sweetness complements the saltiness of the duck leg so well, making it a marriage of sweet and savory flavors. The pairing is topped with a fried egg, corn puree and corn-fed foie gras, which adds a hint of luxury. On the side, there’s a choice of using either maple butter or mashed avocado to round out the dish.
Ube and white chocolate mocha latte
Soho Park’s barista Red Tuico whips up this creamy latte that’s straight off the menu. The sweetness of the use is elevated by the addition of white chocolate, and can be served hot or iced.

Founded through James and Tasha Dixon’s passion for creating, Unos Design started as their personal hub where they could showcase their love for designing interiors, fashion, motorcycles, food and drinks. “The concept behind Unos Design is to build a lifestyle brand around an establishment that promotes art, music, and the freedom to express your passions under one roof,” says Tasha. The result is a coffee and cocktail bar that serves great brews, small bites, and signature drinks while displaying their customized bikes, leather bags, and accessories.
Befitting to this concept, Unos Design successfully treads a fine line between a homey vibe and a big city feel reminiscent of Hong Kong, London, and New York. “We encapsulate a relatively hipster feel and promote street culture through our selection of art, products, and music,” Tasha explains. The eclectic design is emphasized through the hand-painted chairs, the propriety art and photography, and the customized BMW on display. Tasha adds that she and James conceptualized all the elements, with everything fabricated, modified and painted by their team.

THE CHOCOLATE CHAMBER BOUTIQUE
International delegates involved in the recently concluded APEC have already had a taste of Ralfe Gourmet’s famed chocolates, bringing Raquel Choa’s vision of promoting local tableya as a world-class product one step closer to reality. In line with her ongoing efforts, the Chocolate Queen of Cebu recently opened The Chocolate Chamber Boutique, an offshoot of her eponymous restaurant. It’s meant to be a showroom of her products; but while dining customers are directed to The Chocolate Chamber down the road, there’s also a room designated for small functions and chocolate appreciation sessions.
With Raquel’s penchant for decorating and close attention to detail, no two visits to The Chocolate Chamber Boutique will ever be alike. The neutral color palette on the walls makes them ideal canvasses for Raquel’s chocolate paintings, including a big map of the Philippines on one side. The items on the shelves are constantly rearranged to highlight different products. The chocolate displays are always different, yet mouthwatering every single time. PIGAFETTA
Following the huge success of Zubuchon—yes, that restaurant hailed by Anthony Bourdain as having the ‘Best Pig Ever!’—Market Man Joel Binamira shifts his focus to a new dining concept in Cebu. Vastly different from his flagship restaurant, Pigafetta is—in Joel’s own words—a small watering hole for folks who want an authentic Italian meal in a modern setting. “It’s a place to relax and enjoy a glass of wine and perhaps a plank of cold cuts before a bowl of pasta or a Neapolitan-style pizza,” says Joel. “It’s meant for a younger, cosmopolitan crowd that not only looks for Italian food, but an appealing setting as well.”
Pigafetta’s interior, designed by architect Maya Franco and executed by KG Builders, is meant to set the mood for a meal—a casual yet modern and slightly edgy feel than Joel’s other restaurants. The décor, is predominantly black and white, complemented by local machuca tiles, stainless steel surfaces, wooden tables, and metal chairs. Dining at Pigafetta is also a comfortable yet stylish affair, with carefully selected plates, cutlery, and glasses that are conversation pieces by themselves. Filament bulbs add a nostalgic touch, providing a softer light that creates an intimate and welcoming ambiance that invites guests to linger in the evenings.

Seven years after it first opened at the Ayala Center Cebu, Canvas Bistro Bar Gallery reinvents itself with an intimate yet industrial setting—a canvas, if you may—for their dishes served in signature artistic flair.
The new Canvas Bistro Bar Gallery, located along the Maria Luisa Road in Banilad, utilizes the materials used in their previous restaurant. Interior designer Shiela Solon collaborated with owners Chef Steve and Eya Shrimski for an unfinished minimalist decor, complemented with warm lighting from the eclectic mix of light fixtures. Besides highlighting the artworks displayed in Canvas—it is a gallery, after all—the lighting also makes it easy to take some drool-worthy #foodporn posts, especially their new offerings, which range from healthy options to classic breakfast staples to all-time favorite comfort food.

Take a walk on the wild side—at 35 stories up, that is. Sitting atop Crown Regency right along the bustling Fuente Osmeña, you can walk around the building’s ledge, ride a coaster that can tilt you to the ground, or take a zip line from one tower to the other.
6:30 P.M. – DINNER AT ZUBUCHON
What better way to indulge with some succulent roasted pork? Although their version isn’t exactly the trademark Cebu lechon, Zubuchon’s roasted pork is crisp, full of flavour, and definitely worth the calories.
8:00 P.M. – SOUVENIR SHOPPING
You can’t leave town without something to remember your trip by. Islands Pasalubong carries all the delicacies and products you’ll want to bring home, from dried mangoes and danger to Cebu-themed shirts and accessories.
