Entice the Senses with The Pig & Palm’s New Dishes

Chef Jason Atherton’s flagship restaurant in the Philippines, The Pig & Palm, pleases palates with new dishes creatively crafted by head chef – Karl Emsen.  These additions to the menu bring eclectic flavours together with a balanced, singular vision of pure culinary delight. 

KFC – Korean Fried Chicken

Indulge in classic favourites that are given The Pig & Palm touch, such as the KFC Korean Fried Chicken served with kimchi ketchup. The chicken is  crisp yet tender, seasoned with traditional spices, and coated in a gochujang glaze to fire up the tastebuds. 

Linguine Nero

In all of Jason Atherton’s restaurants around the world, a source of inspiration is always the region’s freshest fare and local produce. Cebu’s seascape and abundant marine life serve as the main influence of the Linguine Nero. Perfectly al dente and served with the freshest shellfish, prawns, and clams, the dish is a signature play of textures, colors and tastes with its salsa verde, chorizo bits and creamy, rich crab bisque sauce. 

Garlic Prawns

Another dish to try is the Garlic Prawns. The locally sourced prawns are coated in a rich garlic butter sauce and grilled in olive oil, artfully plated and served with squid ink aioli topped with shichimi.

Prime British Hereford Rib Eye Steak

Their take on modern European cuisine is evident in their sumptuous Pea and Ham Risotto with salsa verde, mint, and Parma ham straight from Italy. Another is the Prime British Hereford Rib Eye Steak sourced directly from Suffolk, England and dry-aged for 35 days to bring out the tenderness and underlying savouriness of the meat. Served with peppercorn sauce and triple-cooked chips with saffron aioli, this choice cut for the month is at P1,500+ until the end of August.

English Bramble

The Pig & Palm is known for creative concoctions that are as decadent to the eyes as they are on the palate. The “English Bramble” Blackberry Eton Mess is a twist on a traditional English dessert that is named for the way it is to be eaten which is to break the meringue and mix with the berries and cream.  Whereas the classic version uses strawberries, this interpretation is a scrumptious jumble of blackberry mousse and sorbet, encased in meringue that is nestled on top of a miso shortbread biscuit, and dusted with blackberry powder.

Chef Jason Atherton has 17 restaurants globally located in London, New York, Hong Kong, Shanghai, Dubai, and Sydney, four of which have been awarded the coveted Michelin Star – Pollen Street Social, Social Eating House and the City Social in London, and The Clocktower in New York City. His first foray into the Philippine culinary scene is The Pig and Palm in Cebu.

The brand Arcy Gayatin gave the Queen City of the South a distinct reputation in the fashion industry.  The fashion line of Arcy Gayatin sets the bar higher each year for clothing luxury and fabrication techniques.

Araceli “Arcy” Ancajas Gayatin is the daughter Galileo Ancajas and Remedios Zanoria Ancajas who founded Cebu’s home brand, Gal’s Bakery.  Arcy went to the University of San Carlos and studied Political Science.  And just like Dr. Muccia Prada, who completed her Ph.D. in Political Science and established the luxury line of Prada, Arcy also got in touch with her artistic side and started her own fashion line.  However, it was not Prada that influenced Arcy.  Arcy was introduced to fashion and tailoring at a very young age by her mother, Madame Remedios Anacajas whom they dearly call Mama Eme.  Mama Eme was running a tailoring business back then.  It was called Arabel; named after Arcy and her sister Belma.  Ara from Araceli and Bel from Belma.  In those years, Arcy was fascinated by fabrics and was intrigued by how to manipulate the fabrics to come up with fashion-forward designs without compromising comfort and taste.

After 37 years of creating haute couture pieces for the most fashionable personalities in the Philippines, Arcy Gayatin is now laying down her sketchpads and pens to rest.  As she enjoys her retirement, may be on a cruise to the Bahamas or a holiday to the Swiss Alps, Arcy Gayatin has left the fashion industry a legacy of elegant and edgy clothing ensembles that understand and define the shape of women; without compromising comfort and good taste.

To salute the lady who brought Cebu fashion to the world, a retrospective exhibition of Arcy’s incomparable masterpieces can be seen today at Ayala Center Cebu’s The Gallery; curated by fashion editor and writer, Clint Holton Potestas, and interior and fashion designer, Jul Oliva.

 

BALANCE.  Arcy Gayatin is known for her perfect symmetrical lines when fabricating.  She knows how to balance edginess and class; understanding well the strength and the finesse of a woman.

 

RHYTHM.  Arcy’s expertise in draping and fabric manipulation can be seen in how she achieves rhythm between architectural lines and soft fabrics like silk and cashmere.

 

TEXTURE.  With her thorough knowledge on fabrics, Arcy Gayatin has achieved the perfection of fabrication by working on different types of fabrics and creating a single piece of art out of them. 

 

HARMONY.  The simplicity of the silhouette plus the intricacy of the details create a wonderful harmony, making Arcy Gayatin’s design a one-of-a-kind masterpiece.
